Pepper bruschetta

Ingredients for 2 servings:

  • 4 bell peppers, red and yellow
  • 2 cloves garlic
  • 2 tbsp olive oil
  • 1 pack of goat’s cheese, approx. 125 g
  • 4 slices of bread (wood-fired bread)

Instructions

Working time approx. 20 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Clean the peppers, quarter them, and bake them skin-side up in the oven at 250°C for about 10 minutes. Then let them cool, peel them, and dice them into small pieces. Finely chop the garlic. Mix the pepper cubes with the garlic and olive oil. Toast the bread and spread the goat’s cheese on top. Then spread the pepper mixture on top.
