Ingredients for 4 servings:

  • 1 bell pepper(s), yellow or red
  • 2 sprigs thyme, fresh
  • 3 tbsp olive oil
  • 1 tbsp capers
  • 6 tomatoes, dried, preserved in oil
  • salt and pepper
  • 12 slice(s) white bread, baguette or wholemeal bread/baguette, thin

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Wash, trim, and finely dice the bell peppers. Strip the thyme leaves. Sauté both in 1 tablespoon of oil over medium heat for about 5 minutes. Roughly chop the capers. Dice the tomatoes, mix with the remaining oil and the bell peppers, and season with salt and pepper. Toast the bread until crispy (in the oven at 180-200°C or in a toaster oven), then spread the mixture on top. They taste best warm.
