Pepper soup with noodles

Ingredients for 4 servings:

  • 4 bell peppers, chopped (no green ones)
  • 1 gr. can/n tomatoes (850 ml), peeled, chopped
  • 2 onions, diced
  • 2 cloves garlic, chopped or crushed
  • 1 chili pepper(s), red, chopped
  • Salt
  • pepper
  • Paprika powder, sweet and hot
  • 2 tbsp sugar
  • 1 tbsp oil
  • 240 g noodles (soup noodles)

Heat the oil in a pot. Sauté the onions, garlic, and chili pepper. Then add the bell pepper and fry for about 5 minutes. Meanwhile, in a separate pot, cook the soup noodles until almost al dente. Add the tomato pieces and their juice to the bell pepper, season with salt and pepper, and add the sugar. Simmer on low heat for about 15 minutes, until the bell peppers are tender. Then puree the soup either with a hand blender or pass it through a sieve. Season to taste with paprika. Finally, add the noodles and serve. Tip: If you like it a little spicier, you can also add piri piri. For a milder version, add a little crème fraîche.
