Pepperoni fried potatoes à la Didi

Ingredients for 2 servings:

  • 400 g potato(s), waxy
  • 3 peppers, green, pickled
  • 1 m.-large onion(s), red
  • 1 m.-large shallot(s)
  • 1 tsp salt
  • 1 tsp Rub (Dry Rub à la Didi hot, recipe in my profile)
  • 3 tbsp sunflower oil

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

from raw potatoes

Peel the potatoes, cut into thin slices (approx. 3 mm), and place in cold water. Peel the onion and shallot and dice into small pieces. Halve the bell pepper and slice into rings. Heat a pan with oil. Dry the potato slices and fry in batches in the pan until golden brown on both sides. Remove the potatoes from the pan and season with salt and dry rub. Sauté the shallots, diced onion, and bell pepper in the pan until translucent, add to the potatoes, and mix everything together. Return the seasoned potatoes to the pan and heat through. Plate up the fried potatoes and serve.
