Rice pudding with banana and quark

Ingredients for 2 servings:

  • 550 ml milk
  • 120 g rice pudding
  • 40 g vanilla sugar
  • 2 eggs
  • 250 g quark, 20%
  • 1 pinch of salt
  • 2 bananas
  • 1 tbsp cinnamon sugar

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 55 minutes; Total time approx. 1 hour 20 minutes

Bring the milk to a boil in a saucepan, stir in the rice pudding, and let it swell over medium heat for about 25-30 minutes. Stir the rice pudding occasionally, then add the vanilla sugar. Preheat the oven to 180°C (convection oven). Separate the eggs. Beat the egg whites with a pinch of salt until stiff. Mix the egg yolks with the quark. Peel the bananas and mash them with a fork. Mix both ingredients into the rice pudding. Fold in the egg whites. Spread the rice into a greased baking dish and sprinkle with cinnamon sugar. Bake the casserole for 25 minutes. If desired, add a few knobs of butter on top. These ingredients are enough for 2-4 people. Serve with compote.
