Pesto crepes with ham

Ingredients for 5 servings:

  • 75g pesto
  • 1 egg(s)
  • 75 g flour
  • 150 ml milk, low-fat
  • Oil, for frying
  • 5 slices of cooked ham

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Makes 5 crepes

Whisk or use a mixer to combine the pesto, egg, flour, and milk into a batter. Brush a crepe pan or frying pan with oil and heat over medium heat. Scoop in four to five tablespoons of batter and immediately swirl to spread the batter evenly. Once the surface is dry and the edges of the batter are curling upwards, flip the crepe over with a spatula and cook for about 30 seconds. Stack the finished crepes on top of each other with baking paper between them. Once all the crepes are cooked, top each one with a slice of ham and fold or roll it up into triangles. We like it with tomato salad.
