Broccoli and ham pancakes

Ingredients for 2 servings:

  • 2 eggs
  • 125 ml milk
  • some nutmeg
  • salt and pepper
  • 125 g flour
  • 100 g diced ham
  • 3 spring onions
  • 250 g broccoli
  • some oil for frying
  • some butter for frying

Instructions

Working time approx. 15 minutes; Rest time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

Whisk the flour with the eggs and milk until smooth and season with salt, pepper and nutmeg. Let it rest for a few minutes. In the meantime, wash and trim the spring onions and slice them into rings. Trim the broccoli and cut them into florets, then slice the florets. Heat a little oil in two large pans, fry the ham cubes until crispy, add the spring onions and broccoli and fry briefly. Season lightly with pepper and a little salt if desired. Now spread the pancake batter over the pan, put a lid on the pan and let the pancake set over low heat. Turn the pancake over, add a little butter to the pan and fry the other side until golden brown. Serve with a cream cheese dip and a salad.
