Pesto polenta

Ingredients for 4 servings:

  • 250 g polenta
  • 750 ml vegetable stock, possibly more
  • 4 tbsp tomato paste
  • 4 tbsp pesto of your choice
  • 3 tbsp herbs de Provence
  • 30 g butter
  • salt and pepper
  • chili
  • Oil for frying

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Cook the polenta in the vegetable broth according to the package instructions. Mix all ingredients together. Let it swell for 15 minutes, stirring occasionally. Then spread it on a baking sheet and let it dry until firm to the touch. Cut into the desired shape and fry in a little oil.
