Spicy green spelt patties

Ingredients for 4 servings:

  • 1 onion(s)
  • 30 g butter
  • 250 g green spelt meal
  • 500 ml vegetable stock
  • ½ bunch mixed herbs, fresh or frozen
  • 150 g medium-aged Gouda, grated
  • 1 egg(s)
  • 50 g peanuts, ground
  • salt and pepper
  • turmeric
  • chili
  • Oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Peel and dice the onion, and fry in butter until translucent. Add the green spelt meal and fry while stirring. Deglaze with the broth. Let it simmer over low heat for about 20 minutes. Finely chop the herbs and add them to the batter along with the grated Gouda cheese. Mix the egg and peanuts into the batter and season with spices to taste. Form the mixture into small patties and fry in oil until crispy on both sides.
