Pesto Tortellini Salad alla Caprese

Ingredients for 4 servings:

  • 1 kg tortellini
  • 3 tbsp pine nuts
  • 400 g cocktail tomatoes
  • 300 g mini mozzarella
  • ⅛ liter balsamic vinegar, white
  • 3 tbsp pesto
  • 75 ml olive oil
  • 1 bunch of basil
  • 1 pinch(s) of sugar
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 1 hour 10 minutes

Cook the tortellini according to the instructions and let cool. Toast the pine nuts in a pan without oil. Mix the pesto with the vinegar, oil, sugar, pepper, and salt in a bowl. Halve the tomatoes, finely chop the basil, and add them to the sauce along with the mozzarella. Then add the tortellini and pine nuts and mix everything together. Let the salad sit for at least 30 minutes.
