Ingredients for 4 servings:

  • 250 g rice (fragrant rice)
  • 750 g minced meat, mixed or beef
  • 5 garlic cloves
  • 12 chili peppers (Thai chili), fresh
  • 3 tbsp fish sauce
  • 8 tbsp soy sauce, dark
  • 2 tsp sugar
  • 200 g beans (Thai asparagus beans), approx. 1 m long
  • 1 bunch basil (holy basil, Bai Krahao)
  • 4 eggs
  • oil

Instructions

Working time approx. 5 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 25 minutes

First, put the rice on the stovetop, as the rest only takes about 20 minutes. Finely chop the garlic cloves and chili peppers and fry in hot oil until the garlic is lightly browned. Watch out for the chili fumes! The number of chili peppers depends on the desired spiciness: 6 chili peppers = mild, 12 chili peppers = very hot. Now add the minced meat and fry until almost cooked. Season with fish sauce, soy sauce, and sugar, and continue frying. Finally, stir in the finely chopped broad beans and torn basil leaves, and continue frying until the rice is done. During this time, quickly prepare the fried eggs and then arrange everything on a plate.
