Place the flour on a work surface, make a well, and add the lard, yeast, and a pinch of salt. Knead with lukewarm water until you have a medium-firm dough (roll vigorously for at least 15 minutes). Form a ball, cover, and let it rise in a warm place for about 30 minutes. Knead the dough vigorously for another 5 minutes, then roll it out to a thickness of 2 mm and cut out 15-20 cm circles using a bowl or a knife. Bake the piadinas in a pan on both sides and top with your choice of toppings (Parma ham, Gouda or Pecorino, arugula, tomato, etc.) and fold them in half. Serve immediately!
