Ingredients for 4 servings:
- 1 kg tomatoes, harvested green
- 1 liter vinegar (pickling vinegar)
- 1 tsp spice mix (pickling spice)
- 1 tsp peppercorns
- 1 tsp salt
Instructions
Working time approx. 15 minutes; Total time approx. 15 minutes
Quarter the tomatoes (leave cocktail tomatoes whole), fill them into prepared jars. Pour the vinegar mixture over them, seal tightly, and let them steep for about 3 weeks. Vinegar mixture: Heat all ingredients to about 75°C, but do not boil!
