Ingredients for 1 servings:

  • 30 fish(s) (green herring)
  • 3 tbsp sugar
  • 3 tbsp salt
  • 1 ½ tsp ground pepper
  • 1 bag of bay leaves
  • 20 g peppercorns
  • 20 g mustard seeds
  • 4 large gherkins
  • 4 large onions
  • some allspice, ground
  • e.g. vinegar (wine vinegar)

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Place the gutted fresh herring in a bowl and pour wine vinegar over them until they are covered. They must sit like this for 24 hours. After 24 hours of marinating, remove the herring from the vinegar and debone them. Slice the gherkins and onions. Mix all the other ingredients except the bay leaves. Now start layering. A square container with a lid is best. First lay out the herring fillets, then sprinkle on the spices a teaspoon at a time, then add the sliced ​​gherkins and onions and bay leaves. Then more herring, spices, onions, gherkins, bay leaves, and more fish… The last layer should be the gherkins and onions. Seal the container and let it stand in a cool place for at least a week. Don’t let any liquid get on the fish; it will form naturally over time. Quick and easy to make. This goes very well with fried potatoes and a cold beer.
