Pickled Tomatoes
The perfect pickled tomatoes recipe with a picture and simple step-by-step instructions.
For the brew
- Herbs from the garden
- Garlic
- 1 liter Water
- 2 Tablespoon (level) Salt
- 3 teaspoon Sugar
- 3 tablespoon Vinegar essence (25%)
- Prepare glasses, wash and so on. I didn’t use screw-top jars this time, but they’ll go for it.
- Wash tomatoes. They should not be too ripe yet, otherwise they will become too soft or burst. I used the small tomatoes for pickling. You get a few more in the glass. You can use tomatoes of all colors. The more colorful, the more beautiful.
- I got herbs from the garden like dill, savory, thvmian, chives, garlic (a mixture of chives and garlic). Then I used fresh cloves of garlic, onions, bay leaves, peppercorns, mustard seeds, and allspice. Herbs and spices can be used according to taste. I filled each glass with different herbs and spices, so each one tastes different.
- Put the small tomatoes in the glasses. I filled 3 glasses for this amount of liquid. Some herbs can be put into the glass first and then the tomatoes. About 2 cloves of garlic for 1 glass. When the glass is filled with the tomatoes, put the herbs on top again.
- Boil the stock with sugar and salt until everything has dissolved and pour it hot over the tomatoes into the glasses. Cover and let stand for a few minutes. This is how the tomatoes warm up. It can happen that one or the other tomato bursts, but it is not that bad. Then pour off the brew again and put it in the saucepan.
- Now put the dry spices in the glasses, such as bay leaves, peppercorns or mustard seeds. Put the saucepan with the stock on the stove again and bring to the boil. Remove from heat and stir in the vinegar. Now add the stock to the tomatoes again, close to the brim and immediately close tightly and turn upside down so that they close. The tomato jars will last at least until winter, or much longer if you haven’t eaten them beforehand. After 2 weeks we tried the first glass, great as a side dish for grilling, with a salad or with bread and butter.
