Ingredients for 12 servings:

  • 1 ½ kg zucchini, preferably small
  • Salt
  • 1 liter tomato sauce (Salsa Pizzaiola), Italian tomato sauce that I make according to my own recipe

Instructions

Working time approx. 20 minutes; Rest time approx. 8 hours 45 minutes; Total time approx. 9 hours 5 minutes

Cut the washed and trimmed zucchini into approximately 5 mm strips. Spread the zucchini strips on kitchen paper, sprinkle with salt, and let them soak for about 1/2 hour. Dab off the water and sprinkle the reverse side with salt and let them soak for about 1/2 hour. Fry the dried zucchini strips in a pan with hot fat until browned on both sides. Place them back on kitchen paper and let them absorb the fat. Marinate the zucchini strips in a tomato sauce, layer by layer, at least overnight. This is an Italian appetizer eaten with crusty white bread.
