Pide with spinach and feta cheese

Ingredients for 4 servings:

  • 250 ml milk
  • 40 g yeast, fresh
  • 50 g margarine
  • 600 g flour
  • salt and pepper
  • Sugar
  • 4 eggs
  • 200 g spinach (frozen)
  • 250 g sheep’s cheese
  • 1 egg yolk
  • 1 garlic clove(s)
  • 1 small onion(s)

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 20 minutes

Gently heat the milk, margarine, and a pinch of sugar, then dissolve the yeast. Combine the flour, 1 teaspoon of salt, and 2 eggs in a mixing bowl. Pour in the yeast mixture and make a smooth dough. Let it rise for about 30 minutes. Meanwhile, thaw the spinach, then strain and finely chop it. Mix the finely chopped garlic clove and onion into the spinach. Place it in a bowl with the diced feta cheese and season with salt and pepper. Preheat the oven to 200°C (top/bottom heat). Form the dough into 4 balls, roll them out into ovals, and place them on 2 baking sheets. Place 1/4 of the cheese and spinach mixture into the center of each ball. Fold the edges of the dough inward, but do not completely cover the filling. Whisk the egg yolk with 1 tablespoon of milk and brush the dough with it. Crack two eggs, mix, and pour over the filling, spreading with a pastry brush if necessary. Bake the pide in the oven for about 20 minutes, until the feta cheese has brown edges.
