Ingredients for 2 servings:
- 125 ml milk
- 1 packet of dry yeast
- 25 g margarine
- 300 g flour
- 3 eggs
- 200 g spinach, chopped, frozen
- 200 g sheep’s cheese
- 1 garlic clove(s)
- 1 small onion(s)
- some sugar
- salt and pepper

Mix the flour with the dry yeast. Gently warm the milk, margarine, and a pinch of sugar. Place the flour, 1/2 teaspoon of salt, and 1 egg in a mixing bowl. Pour in the yeast mixture and make a smooth dough. Let it rise for about 30 minutes. Meanwhile, thaw the spinach in a saucepan. Mix the finely chopped onion with the spinach and press in the garlic clove. Place the dough in a bowl with the diced feta cheese and season with salt and pepper. Preheat the oven to 200°C (top/bottom heat). Form the dough into 2 balls, roll them out into ovals, and place them on a baking sheet. Place half of the cheese and spinach mixture in the center of each ball. Fold the edges inward, but do not completely cover the filling. Whisk one egg yolk with 1 tablespoon of milk and brush the dough with it. Crack one egg and mix it with the remaining egg white. Pour the beaten egg over the filling, spreading it with a pastry brush if necessary. Bake the pide in the oven for about 20 minutes, until the feta cheese begins to brown.
