A hearty snack in the port of Kalamata, served with French fries it is a main meal.
You will need three skewers, each approximately 20 cm long. Thaw the frozen sausage, then cut it crosswise into 9 pieces like the fresh sausage. Trim both ends of the small red onions, peel them, and use them whole. Wash a tomato pepper, halve it lengthwise, and remove the seeds from one half. Then cut that half into thirds lengthwise and crosswise. Wash the tomatoes, remove the stems, and use them whole. For the onion sauce, peel the onion and cut it into approximately 5 mm cubes. Wash the small red chili peppers, cut it crosswise into thirds, leaving the seeds and discarding the stems. Trim both ends of the garlic clove, peel it, and press it through a garlic press. Place the garlic in a bowl along with the onion and chili pieces and mix well with the remaining sauce ingredients. Thread an onion, then a slice of red pepper, then a piece of sausage onto the skewers. Repeat this process. Then skewer a small tomato lengthwise and repeat the sequence of ingredients above once more. Heat the frying oil to 200°C and add the three skewers together. Fry the skewers for 2-3 minutes, place them on a serving plate, drizzle with the sauce, and serve hot with French fries.
