Ingredients for 4 servings:

  • 500 g flour
  • 1 egg(s)
  • 1 tsp salt
  • 2 tbsp olive oil
  • 200 ml milk
  • 40 g yeast
  • 1 tsp sugar
  • 700 g mushrooms
  • some olive oil for frying
  • 6 tbsp sour cream, more if desired
  • some parsley, freshly chopped
  • some salt and pepper
  • Thyme
  • Flour for the work surface
  • lots of oil for frying

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 1 hour 25 minutes

Russian pierogi with mushroom filling

Combine flour, salt, and egg in a bowl. Warm the milk and stir in the yeast. Add the sugar and continue stirring. Now add the milk to the flour in the bowl and mix well with a mixer. Finally, add the oil and let it rest in a warm place for at least 30 minutes. In the meantime, prepare the filling. Wash the mushrooms, quarter them, and fry them in a pan with oil. Then mix them with the remaining filling ingredients and season with spices. Roll out the dough on a floured surface, cut out circles (about 7-10 cm in diameter, 1/2 cm thick), and place the filling in the center. Fold the dough together. Add plenty of oil to a pan and fry the dumplings until golden brown. Or bake in the oven at approx. 200°C for 20-25 minutes.
