Pizza meatloaf with potatoes

Ingredients for 4 servings:

  • 500 g minced meat
  • 800 g potatoes, small
  • 1 red bell pepper(s), cut into pieces
  • 1 medium-sized onion(s), chopped
  • 125g mozzarella
  • 1 tsp oregano
  • 1 tsp thyme
  • 2 tsp breadcrumbs
  • 2 cloves garlic
  • 4 tbsp olive oil
  • 2 eggs
  • salt and pepper
  • 4 tsp water
  • 150 g salami (poultry), cut into strips

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

First, mix the minced meat with the eggs, then add the breadcrumbs, 2/3 of the chopped onion, half of the bell pepper, and the spices. Crush the garlic and mix in. Form the minced meat mixture into a loaf and place it in an oiled casserole dish. Arrange 1/4 of the bell pepper pieces and the salami strips on top, and finally, arrange the sliced ​​mozzarella cheese on top. Now arrange the tomatoes, the remaining bell pepper pieces, and the remaining onions around the meatloaf. Place the lid on the dish. Wash the potatoes, toss them in 3 tablespoons of olive oil, and add a little salt. Place everything in a casserole dish with 4 tablespoons of water. Place the lid on top. Place both casseroles in the preheated oven at 200°C with fan for about 60 minutes. After 40 minutes, remove the lid from the meat so it becomes nice and crispy.
