Mix the wheat flour, dry yeast, and sugar, add the water, and knead briefly. You can, of course, also use fresh yeast; to do this, dissolve half a cube of fresh yeast in lukewarm water and then add it to the dry ingredients. Add the salt, olive oil, and herbs. Knead into a smooth, elastic pizza dough. Cover and let rise in a warm place for about 30 minutes. Form the dough into 9-12 rolls and place them on a baking sheet, covered, and let rise for another half hour. Preheat the oven to 225°C. Lightly press the tops of the rolls with a tablespoon and spread with the tomato sauce. Cut the mozzarella and other cheeses into strips and top the rolls with them. Sprinkle with freshly ground pepper or chili flakes if desired. Bake the rolls in the oven for about 10-15 minutes until golden brown.
