For plum dumplings made from potato dough, you need the following ingredients: 500 grams of potatoes, 150 grams of flour, an egg, about 500 grams of plums, 80 grams of butter, six tablespoons of breadcrumbs, a little salt and cinnamon and sugar.

  1. First, you need to peel and boil the potatoes. Then mash the potatoes into a mash with a potato ricer. Then let it cool down.
  2. Meanwhile, halve and stone the plums and place a small spoonful of the cinnamon-sugar mixture in the hollow of the missing stone.
  3. Now mix the cold mashed potatoes, the flour, the egg, and some salt. If the dough is too sticky, just add more flour.
  4. Then form small flat circles of the same size from the dough. Then place a plum on top of this and shape the circle into a dumpling with the plum in the middle.
  5. Bring salted water to a boil in a large saucepan and add the dumplings. Reduce the temperature. The water should just simmer. The dumplings need 10 minutes in the water until they are ready.
  6. Now melt the butter in a pan, stir in the breadcrumbs and let them toast a little. Roll the dumplings in it.
  7. Remove the dumplings from the pan before they start to brown and sprinkle with cinnamon sugar before serving. The vanilla sauce tastes particularly good with it.
