Ham & Egg with a twist

Bring a liter of water to a boil with vinegar and salt. Briefly hold a raw egg in a spoon for 20 to 30 seconds. Reduce the heat on the stovetop so the water is just simmering. Cool the egg briefly under cold water, then crack it into a container. Toast some bread in a toaster. Slide the egg from the container into the water, gently stirring the water around it. The egg white will wrap itself around the yolk. After about 2.5 to 3 minutes, carefully remove it (with a ladle or large spoon) and briefly place it on kitchen paper. Top the slice of toast with Serrano ham. Place the poached egg on top and sprinkle with some mixed pepper from the pepper mill. Sweet cherry tomatoes, for example, go well with this. I use organic eggs.
