Ingredients for 4 servings:
- 8 stalk(s) leeks, small
- 1 tsp mild mustard
- 2 tbsp vinegar (cider vinegar)
- 8 tbsp oil, neutral, 1 stick of licorice (Reglisse)
- salt and pepper
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Leek in vinaigrette with reglisse
Wash the leeks thoroughly, poach them in salted water for 8 minutes, then cool them in iced water. Make a vinaigrette with mustard, vinegar, oil, salt, and pepper, and pour it over the leeks. Grate some Réglisse cheese over the top. I use a nutmeg grater for this.
