Ingredients for 1 servings:

  • 1 cake base
  • 1 banana(s), ripe
  • 1 dashes lemon juice
  • 2 tsp cream stiffener (e.g. San-Apart)
  • 300 ml cream
  • Wafers or round butter biscuits
  • Cake icing (chocolate) or couverture

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Also called mountaineers, good use of leftovers

Mash the banana with a fork. Add lemon juice to prevent it from browning. Finely crumble the cake base. Whip the cream with San-Apart until stiff. Mix everything well. Spread the mixture on the wafers or cookies and form each one into a “mountain.” Cover with chocolate or cocoa glaze and refrigerate. Serve chilled. You can also briefly freeze the wafers with the mixture piled up and then cover them with the glaze while they are still ice cold. This will set the chocolate almost immediately and barely drip.
