Porcini cream sauce with fresh porcini mushrooms

Ingredients for 4 servings:

  • 150 g porcini mushrooms
  • 2 m.-sized onion(s)
  • 2 garlic cloves
  • 200 ml cream
  • 200 ml milk, 3.5% fat
  • 1 shot of white wine
  • 1 tsp vegetable broth
  • 1 tsp basil
  • 1 pinch(s) of sugar
  • 1 pinch of nutmeg
  • salt and pepper

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes

Finely chop the porcini mushrooms, onions, and garlic. Place the onions and garlic in a pot or pan, sprinkle with sugar, and sauté. Add the porcini mushrooms and fry everything together. Deglaze with white wine. Add the vegetable stock and cook with cream and milk until the mushrooms are tender. Add the nutmeg and basil. Season the sauce with salt and pepper and simmer for a few more minutes (about 15 minutes).
