Ingredients for 4 servings:

  • 1 kg porcini mushrooms, fresh
  • 3 m.-sized onion(s)
  • 1 bunch of parsley
  • 1 tsp salt
  • 1 tsp pepper
  • 200 g bacon
  • Clarified butter for frying

Instructions

Working time approx. 25 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 45 minutes

quick and easy

First, clean the fresh porcini mushrooms. Do not wash them with water; use a brush instead. Use this to gently brush off any coarse dirt. Cut the mushrooms into bite-sized pieces. Dice the onions. Dice or strip the bacon. Finely chop the parsley. Sauté the onions in a little clarified butter until translucent. Add the bacon and fry for a few minutes. Finally, add the parsley and toss everything briefly. Now put everything in a bowl and set aside. Sauté the porcini mushrooms for about 3-4 minutes. Meanwhile, season with salt and pepper. Add the onions, parsley, and bacon. Toss and season to taste.
