Pork curry with red lentils

Ingredients for 2 servings:

  • 2 steak(s) (pork neck)
  • 2 onions
  • 2 cloves garlic
  • 30 g ginger
  • 1 red chili pepper(s)
  • 1 ½ tbsp clarified butter
  • 2 tsp curry powder
  • 100 g lentils, red
  • 1 can of tomatoes, chopped
  • 250 ml vegetable stock
  • 1 lime(s)
  • 2 spring onions
  • 150 g yogurt, Greek
  • 50 ml tomato juice
  • curry powder
  • Salt

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Cut the meat into approximately 3 cm pieces. Halve the onions and slice into strips. Peel the ginger and finely dice it along with the garlic and chili. Heat 1 tbsp of clarified butter in a pan. Sauté the onions, garlic, ginger and chili over medium heat for 3 minutes. Add the lentils and curry powder and cook for 2 minutes while stirring. Add the tomatoes, tomato juice, and stock to the lentils, bring to a boil, and simmer covered for 20 minutes. Mix in the meat and simmer for 3 minutes. Season the curry with salt and lime juice. Cut the spring onions into thin strips and sprinkle over the curry. Serve with yogurt. Serve with rice.
