Pork fillet baked in tomato sauce

Ingredients for 4 servings:

  • 1 pork fillet(s)
  • 1 onion(s)
  • 2 tbsp tomato paste
  • 2 tbsp ketchup
  • 1 cup sour cream, or creme fraîche
  • 500 ml broth
  • 1 pack of bacon
  • salt and pepper

Instructions

Working time approx. 30 minutes; Rest period approx. 1 day; Cooking/baking time approx. 30 minutes; Total time approx. 1 day 1 hour

Delicious and easy to prepare for guests

The day before: Slice the fillet, wrap it in bacon, and place it in a dish. Cut the end pieces of the fillet meat into small cubes and sear, adding the finely chopped onion. Mix with tomato paste and pour in the broth. Reduce by half and add the ketchup. Then refrigerate everything overnight. The next day, strain the sauce and stir in the sour cream, seasoning with salt and pepper. Roast the medallions in the dish for about 15 minutes at 200°C. Pour the sauce over the meat and continue cooking for about 15 minutes. Delicious with fresh baguette and salad!
