Ingredients for 4 servings:
- 750 g pork fillet(s)
- 1 small onion(s)
- 500 g mushrooms
- 1 clove(s) garlic
- 1 bunch of parsley
- 1 pack of herbs
- 3 balls of mozzarella (150 grams each)
- 4 tbsp oil (olive oil)
- Salt and pepper, black
Instructions
Working time approx. 1 hour; Total time approx. 1 hour
Cut the fillet into 12 equal-thickness slices and flatten with the heel of your hand. Heat 2 tablespoons of olive oil in a large pan and fry the pork fillet for about 4 minutes on each side. Remove from the pan and season with salt and pepper. Preheat the oven to 200°C (400°F). Peel and finely chop the onion. Heat 1 tablespoon of olive oil and sauté the onions over low heat. Clean, dry, and grate the mushrooms, then slice them (you can also use canned mushroom slices). Add the crushed garlic. Sauté the mushrooms until almost no liquid remains. Mix the parsley and herbs with the mushrooms. Season to taste with salt and pepper. Cut the mozzarella balls into 12 slices. Grease a baking dish and add the mushrooms. Arrange the pork medallions on top and top each with a slice of mozzarella. Season with pepper and drizzle with the remaining olive oil. (You can also place a tomato slice under each slice of mozzarella) Bake in the oven for about 15 minutes until the cheese begins to melt.
