Pork fillet in puff pastry

Ingredients for 4 servings:

  • 1 pack of puff pastry (preferably already rolled out)
  • 500 g pork fillet(s)
  • 2 packs of bacon (enough to wrap the fillet)
  • 1 egg yolk
  • salt and pepper
  • oil

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Season the pork fillet with salt and pepper and sear it in a frying pan with a little oil. Roll out the pastry and spread the bacon on it (pay attention to the length of the fillet…). Place the fillet on the bacon and roll it in the pastry. If you have too much pastry, you can trim it off and use it as decoration. Finally, brush the pastry with egg yolk. Bake the fillet in the oven at 200°C for 30-40 minutes. I serve it with a mushroom cream sauce (in my recipes).
