Ingredients
 

  • 700 g Pork tenderloin
  • 6 Discs Bacon
  • 12 piece Pitted dates
  • Lemon and herb fleur de sel
  • Tellicherry pepper

Instructions
 

  • Wrap two dates at a time with a slice of bacon, as soon as they are ready, put them in a flat baking dish for about 15 minutes at 180 ° C in the preheated oven.
  • Pat the pork tenderloin dry and remove the skin, then cut an opening with a long sharp knife, at the wider end, almost the length of the pork tenderloin, without perforating the outside of the meat. Stuff the fillet with the baked dates wrapped in bacon.
  • Wrap the open end with e.g. kitchen thread to close it. Season with e.g. lemon and herb fleur de sel >> and Tellicherry pepper.
  • Sear the meat on all sides in a hot pan in the left fat of the dates wrapped in bacon and then place in the oven for about 10 minutes at 180 ° C. Take it out and wait a few minutes before slicing and serving.
