Pork fillet with almonds and raisins

Ingredients for 4 servings:

  • 600 g pork fillet(s)
  • 1 organic orange(s)
  • salt and pepper
  • 2 tbsp olive oil
  • 100 ml red wine, dry
  • 40 g almond flakes
  • 1 stalk(s) cinnamon
  • 300 ml gravy
  • 40 g raisins
  • 50 g sour cream

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

Advent dinner

Season the pork fillet with salt and pepper. Rinse the orange, grate half the zest, and squeeze out the juice. Heat olive oil in a roasting pan or frying pan and sear the fillet on all sides. Deglaze with wine and orange juice. Add almonds, cinnamon, and orange zest. Pour in the meat juices and add the raisins. Cover and simmer for 15-20 minutes. Remove the fillet from the meat juices and let it rest, covered, for 5 minutes. Stir sour cream into the sauce and season with salt and pepper. Remove the cinnamon. Carve the fillet and arrange it with the sauce. Serve with orange wedges. Serve with roasted vegetables and fried gnocchi.
