Pork Fillet with Curry and Apricots
The perfect pork fillet with curry and apricots recipe with a picture and simple step-by-step instructions.
- 600 g Pork tenderloin
- 1 Apricots
- 3 Spring onions
- 1 tsp Curry
- 250 ml Chicken broth
- 2 tbsp Soy sauce
- Salt
- Pepper
- Sugar
- Light sauce thickener
- Drain the apricots in a colander and cut them once. Cut the meat into strips. Wash the spring onions and cut into rings.
- Fry the meat in hot oil in a pan, remove it, season with salt and pepper. Sauté the curry and spring onions in the meat stock and pour in the broth.
- Season the sauce with soy sauce, salt, pepper and sugar, bring to the boil and thicken with the sauce thickener to taste. Finally, add the meat and apricots to the sauce and let them warm up.
- We had rice with it, but it definitely tastes good with glass noodles too 🙂 Tip: We like a lot of sauce, that’s why I took a little more stock and also adjusted the soy sauce, salt and pepper.
