For the pork tenderloin

  • 600 g Pork tenderloin
  • Salt and pepper

For the beans wrapped in ham

  • 800 g Runner beans
  • 2 packet Smoked ham

For the potato gratin

  • 500 ml Milk
  • 500 ml Cream
  • 4 Pc. Garlic cloves
  • Salt and pepper
  • Rosemary
  • Butter
  • 12 tbsp Grated Parmesan

For the tomato sauce

  • 2 Pc. Shallots
  • 2 Pc. Garlic cloves
  • 500 ml Sieved tomatos
  • 50 ml Veal stock
  • 50 ml White wine dry
  • 50 ml Marsala
  • 0,5 Pc. Carrot
  • 0,5 Pc. Celery
  • Fresh oregano
  • Fresh thyme
  • Salt and pepper
  • Olive oil
  1. First prepare the tomato sauce. Dice the shallots, cloves of garlic, carrots and celery into small pieces. The shallots are then glazed in olive oil in a saucepan before the remaining chopped vegetables are added. Fry everything briefly and deglaze with the tomatoes. Then add the veal stock, white wine and Marsalla, as well as the chopped fresh herbs and simmer for about 1 hour at a low temperature, then reduce the sauce. Season the jus with salt and pepper and, at the end of the cooking time, strain the jus through a sieve.
  2. For the potato gratin, the raw potatoes are cut into thin slices (the easiest way is to use a slicer for this). Then put the milk and cream in a saucepan. Add the garlic, salt, pepper and rosemary and bring to the boil together with the potato slices, then simmer for about 10 minutes, stirring frequently. Spread butter on a baking dish, pour in the potatoes and milk-cream mixture, sprinkle with cheese and bake in the preheated oven at approx. 220 degrees for approx.
  3. Now the pork fillet is prepared. First wash the fillet, pat it dry and rub it with salt and pepper. Then fry them briefly on each side in a pan and put them in the steamer (cooking time varies from device to device). The beans are also prepared in the steamer. After the allotted cooking time, gather several beans into small bunches and wrap a slice of smoked ham. This packet is then placed in a hot pan and seared briefly on all sides.
