Pork loin steaks in mild vegetable sauce

Ingredients for 4 servings:

  • 8 slices of pork loin
  • 1 vegetable onion(s)
  • 2 carrots
  • 2 tbsp peas, frozen
  • 250 g mushrooms, brown
  • 4 large garlic cloves
  • 200 g tomatoes (small ones are best for aesthetics)
  • 6 tbsp olive oil
  • 250 ml water
  • 5 tbsp soy sauce
  • 2 tbsp butter
  • 100 ml cream
  • 1 tsp flour
  • 1 tsp cornstarch
  • 1 tsp salt
  • 1 tsp lemon pepper, alternatively herb pepper or regular
  • 1 tsp marjoram

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Rub the meat on both sides with salt, pepper, and marjoram. Peel the onion, garlic, and carrots; cut the mushrooms and carrots into bite-sized pieces and the onion into quarters. Peel the garlic cloves and leave them whole. Cut the tomatoes into pieces according to size; leave small tomatoes whole or halve them. Heat the oil in a large, deep frying pan or casserole dish. Add the onions, mushrooms, carrots, and garlic cloves; and fry on high for about 5 minutes, until the vegetables begin to lightly brown, stirring frequently. Deglaze with 200 ml of water and soy sauce, and add the seasoned meat. Press the meat down so that it is slightly covered with the liquid. It does not need to be completely submerged. Cover and simmer on medium heat for about 40 minutes until it is bubbling gently. DO NOT uncover during this time! Remove the meat after 40 minutes and set aside. Add the butter, tomatoes, and peas to the broth, stir gently, and simmer uncovered for about 3 minutes. Whisk the cream with 50 ml of cold water, the flour, and cornstarch in a cup. Add to the hot sauce. Stir immediately. Return the meat to the sauce and bring back to a boil briefly. Season with salt, pepper, or herbs if desired. Serve 2 slices of meat with the sauce and vegetables per serving. Sprinkle with parsley. Serve with boiled potatoes, rice, or simply a piece of baguette. The butter, along with the tomatoes, gives the sauce a delicious flavor. If you’re watching your calories, you can omit the cream and replace it with a low-calorie alternative.
