Pork pan with tomatoes and mushrooms

Ingredients for 2 servings:

  • 1 large pork fillet(s)
  • 1 pack of bacon
  • 1 onion(s)
  • 3 tomatoes
  • 1 jar mushrooms
  • 200 g pasta
  • salt and pepper
  • oil

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 30 minutes

Cook the pasta in salted water until al dente. Wash the pork fillet and pat dry. Cut into 8 medallions and wrap in bacon. Once this preparation is done, heat a pan over high heat, add oil, and sear the medallions on one side until very hot. Turn over and continue cooking at lower heat. Wash the tomatoes and peel the onion. Finely chop the onion and add to the pan along with the mushrooms and a little more oil, if desired. Halve the tomatoes from top to bottom and remove the stems. Add them to the pan cut-side down and sear. When the tomatoes are done, the whole dish is ready. Now drain the pasta, arrange the medallions and tomatoes nicely on plates, spoon the mushroom and onion mixture around them, and serve with the pasta. Season with salt and pepper. As an alternative to pasta, fries also taste good with this dish.
