  • 250 ml White wine cabinet (dry)

  1. I wanted to test it again with the NT cooking process. It worked great with my goose (recipe from Test00). However, pork salmon did not have to boredly cook in the oven for so long …….
  2. I freed the meat from the tendon plate (first had to ask google how it is called :-)) and heavily salted it. Then a pan was heated, a little oil was added and the meat was seared vigorously on all sides.
  3. In advance I had peeled the carrots and cut them into 1 cm thick slices, peeled the shallots and cut them into quarters …… oven heated to 90 ° C ….. swallowed wine …. crushed garlic. Termometer wanted.
  4. After the meat was seared, I put the wine on the vegetables and then put it in the oven. Now it was in the oven at a core temperature of 82 ° C. for 5 hours. I think 4 hours would have done it too. In any case, it was very tender. Side dishes were potatoes and the finest Brussels sprouts.
