Pork Tenderloin with Herb Butter

- 4 tbsp Oil
- 700 g Pork tenderloin
- Salt pepper
- 1 bunch Chives
- 50 g Butter
- 100 g Medium hot mustard
- 4 Discs Farmers bread
- 0,5 bunch Arugula
- Cut the pork tenderloin into approx. 8 medallions of the same size.
- Heat the oil in a pan and fry the meat for about 10 minutes while turning. Season with salt and pepper.
- Cut the chives into rolls. Heat the butter, mix with the mustard and 2 tbsp chives. Take the meat out of the pan, place it in a baking dish and brush with the chives and mustard butter. Bake in a preheated oven (200 ° C, convection: 175 ° C) for about 15 minutes.
