Potato and asparagus gratin

Ingredients for 2 servings:

  • 500 g waxy potatoes
  • 200 g asparagus, green
  • some sugar
  • 200 ml whipped cream
  • 1 tbsp parsley, chopped
  • 1 clove(s) garlic, finely chopped
  • salt and pepper
  • 1 tbsp Parmesan, grated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Boil the potatoes, peel, and slice them. Trim the woody ends of the asparagus, peel some of the lower third if necessary, and cook in salted water with a little sugar for 3-4 minutes (depending on thickness). Drain and then cut into approximately 4 cm long pieces. Layer the potato slices and asparagus pieces in a baking dish. Mix the whipped cream with the parsley, garlic, and half of the Parmesan cheese, and season with salt and pepper. Pour over the gratin, sprinkle with the remaining Parmesan cheese, and bake in the oven at 200°C for about 20-25 minutes.
