Potato and chanterelle pan

Ingredients for 2 servings:

  • 500 g potato(s), waxy
  • 4 spring onions
  • 200 g chanterelles, fresh
  • 100 g ham (salmon ham)
  • 3 juniper berries
  • 4 tsp olive oil
  • Salt
  • black pepper, freshly ground

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Cook the potatoes in their skins. Meanwhile, chop the spring onions and green parts into pieces. Grate and trim the chanterelles. Chop or crush the juniper berries. Cut the smoked ham into strips. Drain the potatoes and let them cool slightly before peeling them, then roughly dice them. Heat oil in a non-stick pan, add the potatoes, and fry. Add the chanterelles and juniper berries, and fry everything for about 3 minutes. Now add the spring onions and smoked ham and fry everything for another 2 minutes. Season with salt and pepper.
