Ingredients for 4 servings:
- 2 onions
- 2 garlic cloves
- 4 carrots
- 400 g potatoes, floury
- 250 g feta cheese
- 50 g butter
- 1 ½ liters of chicken broth
- Cayenne pepper
- Worcestershire sauce
- salt and pepper

Peel the onions and garlic and chop very finely. Clean the carrots and potatoes and cut into slightly larger cubes. It’s best to grate the feta or cut it into very small cubes. Heat the butter in a sufficiently large saucepan, add the onions and carrots and sauté for about 5 minutes while stirring. Briefly braise the garlic. Deglaze with the chicken stock. Add the potatoes and simmer over low heat for about 20 minutes until the potatoes are tender. Remove from the heat and puree. Bring back to a boil, stir in the feta and let it melt. Season to taste with salt, pepper, Worcestershire sauce and cayenne pepper and serve hot. Serve with fresh baguette.
