Ingredients for 2 servings:
- 400 g potatoes, preferably waxy
- 1 cucumber(s)
- 2 tbsp balsamic vinegar, lighter
- 150 g natural yogurt, 1.5%
- ½ lemon(s)
- 3 tsp, heaped dill
- 250 g smoked salmon
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 30 minutes
Boil water with enough salt for the potatoes and bring to a boil. While the water is heating, cut the potatoes (peeled or unpeeled, depending on your taste) into large cubes (approx. 1 x 1 x 1 cm) and add them to the boiling water. While the potatoes are cooking in the boiling water, coarsely grate the cucumber, season with salt, and place it in a colander to drain. Place the yogurt in a bowl and season with the juice of half a lemon, dill, salt, pepper, and vinegar, and stir to combine. Once the potatoes are tender, combine the cucumber, potatoes, and yogurt. Eat the smoked salmon on its own or add it to the salad as a topping. 450 kcal per serving
