Potato and Mango Casserole

Ingredients for 2 servings:

  • 500 g potatoes
  • 1 mango(s)
  • some cherry tomatoes, quantity according to the size of the casserole dish and taste
  • 1 bunch of spring onions
  • 150 g feta cheese
  • 1 piece(s) ginger root
  • 2 garlic cloves
  • 2 tbsp sesame seeds
  • 2 tbsp olive oil
  • salt and pepper

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 45 minutes

Peel the potatoes and mango and cut into chunks. Peel the garlic and ginger and either finely chop, press, or grate them. (Fermented black garlic, which is less spicy, works well in this recipe.) Toss the potatoes with a little oil, salt, pepper, grated ginger and garlic, and the mango, and place in a baking dish. Slice the spring onions into rings and halve the cherry tomatoes. Place both over the potatoes. Sprinkle the diced feta cheese over the top. Finally, sprinkle with sesame seeds. Bake in an oven preheated to 200°C (fan oven) for about 30 minutes on the middle rack.
