Potato and millet hearts

Ingredients for 1 servings:

  • 3 large potatoes
  • 400 g wheat flour (type 812)
  • 200 g spelt flour, wholemeal
  • 80 g millet
  • ¼ cube of yeast
  • 2 tsp, heaped salt
  • 300 ml water, more if needed
  • Flour for working

Instructions

Working time approx. 25 minutes; Rest time approx. 3 hours; Cooking/baking time approx. 30 minutes; Total time approx. 3 hours 55 minutes

Delicious heart-shaped rolls. Makes about 10 rolls.

Peel the potatoes, chop them into small pieces, and boil them. Then press them through a potato ricer and let them cool. Grind the millet. Place the flour, millet, and potatoes in a bowl. Sprinkle the salt around the edge. Make a well in the center and make a pre-dough with the water and yeast. Let it rise for 10 minutes. Then knead everything by hand for 12 minutes (the dough should be soft). Let it rise for another 2-3 hours. Roll out the well-floured dough to a thickness of about 5 cm, cut out heart-shaped shapes using a cookie cutter, and place them on two baking sheets lined with baking paper. Bake at 230°C (top/bottom heat) for 20-30 minutes.
