Ingredients for 4 servings:
- 600 g potatoes
- salt water
- 100 g Parmesan, grated
- 100 g hazelnuts, ground
- 1 egg yolk
- 1 tbsp potato flour
- salt and pepper
- nutmeg
- Butter or margarine for frying

great with roasts, roulades or schnitzel
Boil the potatoes in salted water with their skins on until al dente, then peel while still hot. Let cool, mash with the remaining ingredients, and season with salt, pepper, and nutmeg. Form the potato mixture into small balls (approx. 3 cm in diameter) and flatten to create small patties. Heat the butter in a non-stick pan and fry the patties until golden brown. Tip: Place on kitchen paper before serving to absorb any excess fat.
