Ingredients for 4 servings:

  • 500 g potatoes
  • 500 g pumpkin flesh
  • 2 eggs
  • 2 tbsp whole wheat flour
  • salt and pepper
  • Nutmeg, freshly grated
  • Oil for frying or butter

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

in two variations, vegetarian

Wash, peel, and grate the potatoes and pumpkin. Mix with the eggs and flour and season with salt, pepper, and nutmeg. Version 1: Heat oil in a pan, add a dollop of the hash brown mixture to the pan, and press flat. Fry the hash brown on both sides. Version 2: Brush a waffle iron with oil or butter, add a dollop of the hash brown mixture to the waffle iron, and bake. The hash browns are delicious with either applesauce or herb curd.
