Potato and pumpkin cream soup

Ingredients for 4 servings:

  • 3 potatoes
  • 1 onion(s)
  • 5 cloves garlic
  • 200 g pumpkin flesh
  • 100 g processed cheese (herbs), alternatively sour cream or crème fraîche
  • Salt
  • pepper
  • 1 liter vegetable broth
  • possibly water

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Peel and finely chop the potatoes, onions, and garlic, and add them to a pot with broth. Simmer until tender. About 10 minutes before the end of the cooking time, add the pumpkin and let it cook. Just before the end of the cooking time, add the cheese so it melts. Purée everything with a hand blender and season to taste. Add enough water to make a nice, creamy soup. You can also add more garlic or onion if desired.
