Ingredients for 4 servings:

  • 4 pieces of bratwurst
  • 2 onions
  • 6 eggs
  • 8 potatoes, not too big
  • 3 tomatoes, aromatic
  • salt and pepper
  • chili powder
  • Chives, finely chopped
  • Oil for frying

Instructions

Boil the potatoes in their skins and peel them while still warm. Let them cool. Slice the sausages, dice the onion, and whisk the eggs in a bowl. If you like, you can season the eggs with salt, pepper, and chili now. Fry the sausage slices and onion in a pan, then add the sliced ​​potatoes. Once everything is as brown as you like it (the people I cook for have different ideas about the definition of “brown,” so pay attention to the shade!), add the sliced ​​tomatoes and pour the eggs over everything. Let the eggs set, but don’t stir them too vigorously. Sprinkle with chives at the end. Serve with salad and a beer.
